Apple and apricot cake recipe


  • 250g self-raising flour
  • 1 tea spoon baking powder
  • 225g caster sugar
  • 2 eggs
  • 1/2 tea spoon almond extract
  • 150g melted butter
  • 225g cooking apples peeled, cored and thickly slicked
  • 100g ready to eat dry apricots snipped into pieces
  • 25g flaked almonds


  • Lightly grease the cake tin and line the base with a circle of non-stick baking parchment
  • Pre-heat the oven to 160 degrees Celsius, Gas Mark 4
  • Put the flour, baking powder, sugar, eggs, almond extract and melted butter into a large bowl
  • Mix well to combine, then beat well for 1 minute
  • Add the apples and apricots to the bowl and gently mix in
  • Spoon the mixture into the tin, gently level the surface and sprinkle with the flaked almonds
  • Bake for 1to1 1/2 hrs, until the cake is golden, firm to the touch and beginning to shrink away from the sides of the tin
  • Allow to cool in the tin for a few mins, then turn out on to a plate to serve
