Ingredients
- 250g self-raising flour
- 1 tea spoon baking powder
- 225g caster sugar
- 2 eggs
- 1/2 tea spoon almond extract
- 150g melted butter
- 225g cooking apples peeled, cored and thickly slicked
- 100g ready to eat dry apricots snipped into pieces
- 25g flaked almonds
Method
- Lightly grease the cake tin and line the base with a circle of non-stick baking parchment
- Pre-heat the oven to 160 degrees Celsius, Gas Mark 4
- Put the flour, baking powder, sugar, eggs, almond extract and melted butter into a large bowl
- Mix well to combine, then beat well for 1 minute
- Add the apples and apricots to the bowl and gently mix in
- Spoon the mixture into the tin, gently level the surface and sprinkle with the flaked almonds
- Bake for 1to1 1/2 hrs, until the cake is golden, firm to the touch and beginning to shrink away from the sides of the tin
- Allow to cool in the tin for a few mins, then turn out on to a plate to serve
